I'm trying to do the same thing, except that I am using iTunes 11.0.2. The "How to Convert a Song" page you refer to was last updated in 2008; I tried following it, but the pop-ups referred to aren't there any more.
Can't seem to find out how to convert from .wav to .mp3 on iTunes 11.0.2. Suggestions?

Update to iTunes 11.0.3.

See this -> iTunes 11 for Windows: Save a copy of a song in a new file format
Thanks Chris!
The iTunes 11 instructions work fine to convert the songs and does include them in my library. I am looking to convert these for downloading to my car; how can I avoid the additional instance of the converted songs from being included in the library?
Robert.

You cannot.
Once you convert them and copy them for downlaoding to yoru car, you can delete the mp3 files.
Are there utilities that can do this? I do not look forward to deleting hundreds of songs from the library.

"I do not look forward to deleting hundreds of songs from the library."
Because?
Sort by kind/date added select first song, shift click last song then delete.
Take you about 3 seconds.
Another option is to move them to a new folder. Use Windows Explorer and sort by file type in the itunes folder of your My Music folder. Then move them to a new folder. This way they are always there for you to save to new cds or new mp3 players without having to always reconver them. Or even move them to a usb memory device to keep a copy of them without taking up memory on your computer.
You don't need any additional software, iTunes can convert your music files. You can convert music files to mp3, aac, wav, aiff using itunes.

I converted my songs to MP3 using iTunes 11.2.2, but now can't find them listed in the library so I can move them to the flash drive. Can anyone tell me how to find them or what I might be doing wrong? Under the Kind column, I still only see the purchased AAC audio file listing.
