Using Parallels 7, I have Snow Leopard Server on a virtual machine.
I'll make the question simple. How can I change the resolution to 1920x1080 instead of the smaller 1024x768 in Fullscreen?

In Parallels you should be able to resize the parent window frame and have the virtual machine dynamically adopt the size as a custom resolution setting. However, you can adjust the resolution in the Displays system preferences in the virtual machine and set a specific resolution there.
Unfortunately, when I resize the window, or go into Fullscreen mode, it just scales the virtual machine. I want it to go to the iMac's 1920x1080 resolution.
The only option in System Preferences' Display Menu is 1024x768.
Make sure you install the Parallels Tools in the VM, which can be done from the Virtual Machine menu when you have OS X running in Parallels. This should give it the ability to do things like adopt the resolution changes.
