Yes. All you need is a compatible camera and software that does what you want that works with your system.
My two favorite surveillance apps are EvoCam and Security Spy. Both have great, detailed help instructions.
There are many Mac compatible cameras including those in this list. Be sure your Mac, OS version, and software app are all compatible with the camera you choose.
Alternatively, you can use an internet connected or stand-alone security system like those sold by major home or electronics retailers or security consulting companies.
If you have further questions or concerns after looking at the links above, check with your Apple or other local electronics retailer for assistance. Because of the large number of potential configurations, it may be easier to discuss your specific needs with someone who sells the software and or hardware that you need.

If your camera user manual guide tells you how it can work as a webcam, it will work for surveillance.

That depends on which dvr functions you need. For simply recording the camera's view, you can use the Photo Booth or iMovie app that came with your Mac.
For more complex functions, all you need is a compatible hardware and compatible software that do what you want with YOUR system. Your retailer can help you with the specifics.
