I have the exact same problem. I keep iTunes minimized, doing all kind of other stuff such as surfing the internet. All of sudden the fans speed up and the Activity Monitor shows me that iTunes is not responsive and is using 100% of the CPU. I re-installed iTunes 11.0.3 but it didn't help. What's going on there Apple?
OS X 10.8.3, 15" MacBook Pro (early 2011)
Same on white MB 10.6.8, nothing else running just itunes, not minimized crashed at least 4 times yesterday over about 6 hours of playing music. On re-start warning comes up that itunes volume is set to 0.
Bit disconcerting but it is itunes !
Same problem, no explaination. iTunes is crashing with no reason.
I have iTunes Match. Running on MB late 07 with 10.6.8. Always when iTunes is minimized.
Same problem here. iTunes not active, stays on 2nd desktop. when inactive it crashed
safter approximately 5 minutes! i use itunes match also!
This might be a solution:
1. Quit iTunes.
2. Go to /Library/Preferences and move com.apple.iTunes.plist to trash.
3. If your problem is solved, empty trash. If not, restore the file.
You will have to log in again in iTunes (iTunes store account) and reactivate iTunes Match.

I don't have a file in /Library/Preferences named com.apple.iTunes.plist. I do have one in ~/Library/Preferences, but when I delete that all of my meta data appears to vanish. Since i have thousands of movies, songs and TV shows, I'd prefer a solution that doesn't require I rebuild it all. Anyone have any other ideas?
Also installed iTunes 11.0.3 and now it costs 10-15 seconds between two songs. It seems that iTunes has to search the songs somewhere in the library...
There might be a solution, however, the onus is on Apple to come up w/ (another update?) or whatever that fixes the problem, is it not?
This thread is saying to me, "Michael, don't pull the trigger & do another problematic update."
I am hoping to see some Mac aficionados (the one's with lots of points & experience) to restore our faith in the mothership.
I gave up and after watching iTunes sit idle for hours only to crash within minutes of playing internet radio I reverted (via Time Machine) to the previous version then told it to open the most recent library (Hold option when iTunes launches).
I can deal without the new mini-play but I can't deal with the app just not working.
iTunes 11.0.3 is also crashing on my iMac 27" 2007 running Snow Leopard 10.6.8.
Tried this also. iMac early 2011. Even after deleting the file iTunes still hogs 104% of CPU in activity monitor. Another symptom is that ALL of my playlists are duplicated like 80 times each. (Maybe more if i could look at iTunes on any device, iphone or imac, without it crashing)
So...I think the crashing caused my playlist replication, or vice versa and it is now a vicious cycle.
Any others find a better answer?
DO NOT DOWNLOAD THIS UPDATE ITS SERIOUSLY FLAWED!! I installed it 3 times now and all 3 occasions I've had to reinstall OSX then snow leopard. It crashes my iMac so that absolutely nothing works!!!!!!
same here multiple crashes mbpr 2012
all the time - I get about 10 mins before itunes crashes now - can't listen to anything - I've got Snow Leopard on a Macbook - was always completely stable until this 'upgrade'... hmmmm....
I've upgraded my iMac from Snow Leopard and Lion and that fixed the problem with iTunes crashing.
