Using Verizon iPhone 4s in Paris with a GSM SIM card

How do I change the setting from CDMS to GSM network on an iphone 4s? Verizon has unlocked my iPhone 4s. Their email said to change the setting from CDMS to GSM. I can't find instructions about how to change it. Will it change automatically when the local SIM card for GSM is inserted?
