I have been having a ton of problems with my iPhone 4 lately. Since I updated to the new version of iTunes, it won't sync anymore. And just now, making me very upset, my contacts icon has disappeared!!

Has your iPhone ever been hacked or jailbroken? That may explain the behavior you are describing.
If not, the Contacts icon cannot be removed. It may be on a different screen ... you could search for it by swiping the home screen left-to-right and typing "Contacts" in the search bar.
