As a general rule, it is usually better to upgrade your software. In your case, an upgrade of Palm that does not require Rosetta is not available. So the next usual best choice is alternative software that does some or all of the functions of the earlier software.
In the case of Palm, yes, Address Book, iCal are available to have your data inserted into them. For the exact specifics on how to do this (usually an export in Palm and then an import), you will have to seek solutions to that specific problem.
So, at the end of the day, you have to decide how comfortable you are abandoning Palm now. Continuing to use it will only become more problematic as time passes. The fact that you continue to use Palm hardware devices complicates that issue.
As a user of the iPhone 5, let me just say that I really appreciate that all of my computers and the iPhone are seemlessly sync'd by iCloud, without me having to but much thought into that subject.
