you have installed iTunes Producer, right? if not, open itunesconnect.apple.com and go to section Deliver your content. After you download it, run it, click on Look Up Metadata, enter there apple id of your book (apple id you can find next to your book in itunesconnect.apple.com in section Manage your books, when you click on your book). when your book's metadata shows up, click on tab Book and then on tab down Authors. uncheck there current primary author and check one you want and then click on delivery.

are you using latest itunes producer?

then it's time to write to apple ibookstore support.
