HI, I'm having to upgrade 27 Xserve (currently 3x 1TB (SATA) MB838G/A) with larger raid disks which recommendations have Apple to disk size and type, and what to you recomend?

The 2009 Xserve tops out at a 2TB disk. The Apple drive modules will definitely work with it although this support document does say they require 10.6.1 to be installed. http://support.apple.com/kb/HT1219 they are expensive but at least they are guaranteed to work with the xserve.
