Most of Apple's built-in functions in iOS use the same encryption routines and therefore the same encryption standard. However, the writers of individual apps (e.g. Skype, 1password) are free to use their own encryption routines, and it's possible that each of them has chosen a different standard. If you're interested in a particular app you should ask the publisher of that app.

In the encryption that Apple uses for most of its own functions, Apple uses either triple DES with 128 bit keys or the AES-XTS mode of AES with 128 bit blocks and a 256 bit key. Common reference works on those methods should tell you how secure they are.

For all built-in functions of all current Apple products, both Macs and iDevices, the encryption methods used meet or exceed all the requirements of the 'spook' agencies of both the UK and the US.
