icloud email - icloud ask for an alternate email address. Should I create another icloud email or use another service (such as gmail, hotmail or..) ?
These companies keep changing their @ names.(FYI- my comapny name is easily misspelled so I am not comfortable getting a domain name as of yet.)

It's important that you use an address with another service - GMail or Yahoo would be fine - because if, for example, you forget your password and have to reset it, the new password will be sent to this address - which if it was part of your iCloud account you wouldn't be able to access.

If you have an @me.com address you will retain it, with the @icloud.com as an additional version of it.
Isn't the @hotmail address being retained for those who have it? Anyway, GMail or Yahoo are reliable and free, so even if you only use one for them for this it's no problem.
