That will depend somewhat on the mail service you are using, but typically:

  1. You can choose the behavior of the delete function in Settings for a given account: Settings App > Mail,Contacts,Calendars > [Account] > Aadvanced > Deleted Mailbox. What mailboxes are available will depend on the mail servicve, but typucally you should be able to select from Trash, Archive, and a few others. It is worth noting that usually, the Trash folder is the onlyone that allows mass deletes.
  2. You can always deletre items in the Archive folder individually.
  3. The above is based on gmail settings. for a different service, you may find slightly different settings and options (I also use iCloud for example, and it is a bit more simple). You may want to see if your provider offers any online support or KBs for settings up mail on iOS.
