How can I view individual documents or data?

I am having trouble understanding iCloud storage! With Drop box everything backed up is easily accessible. I want to use iCloud as my main back up but I can't access my documents to delete old stuff, to manage the storage space!!! Do I delete the unwanted document files on the computer? does this automatically delete the from iCloud? Someone please help 😕
