Im using a Ipad 3 - Is there any way to download an excel file to my ipad and use an app that will allow me to edit that file offline. Seems like all the apps im finding require you to have a wifi connection. I need to edit these files in the field and some stores dont have a wifi connection for me to use.

I have documents to go and one thing I like about it is that it comes with a desktop program that allows you to sync your documents over wifi, without going through iTunes....so for example, I can have my syncing folder and sync edit the documents on myiPad, have my iPad on the same wifi as my home computer, do a sync and have those changes moved over to the computer
Comes in handy if you want to sync files between work and home but you can't have your iPad linked to two separate computers with iTunes.
