setting a font only character style

Is it possible to set a character style sheet that only affects the font and no other attributes? (Pages '09)

I tried doing this and only selecting the font in the attributes section, but when I apply it it changes size, kind (bold/italic/etc.) and colour.

It is possible to set a character style that only sets the font, but applying it will cause the other attributes that you mention to revert to those set by the underlying paragraph style.

In other words, any given character will have one paragraph style and (at most) one character style that overrides some of the attributes specified by the paragraph style. When you apply bold or italic or change the size, you are specifying a character style override. If you then apply a named character style, it will remove those overrides unless they are included in the named style.
