Describe more in detail what you mean.
Does the player start, look like the music is playing, but your hear nothing?
Does the player say it can't find any music?
Are you trying to use ear buds or the built-in speakers?
The fact that you say you can't play music when not connected to WiFi leads me to believe you have not really synced your iTunes library to your iPad but instead are playing your music from iCloud or from Home Sharing.
I did go onto iTunesand sync it but it appears to still be playing from iCloud. How do I get it to sync and not play from iCloud?
When I go on to play the music the tracks and albums are coloured grey and will not play when I click onto it.
Can I cancel my i Cloud and get it to play like it did before I had iCloud as I do not like iCloud?

You need to select what you want synced to your iPad. Only checked items will sync. Only individual songs also checked will sync within a category checked.
I did it this way if it is correct or not i'm not to sure but it works and i have music now on my ipad.
Goto settings in ipad and itunes and app store
below where it says show all turn off music
than go a little further down and turn off itunes match
then i went into music which is just below the itunes app in settings and i turned off show all music and music match
i then synced my i pad to itunes on my comutor and i was able to add my music as before.
