Hi there, I'd be grateful if you could help me....
Once I have change my Safari Default homepage, and I quit, and re-open safari, safari opens still on the apple.com/uk site, not the homepage that I have specified.

Quit Safari.
Hold the shift key down and relaunch Safari.
Empty Caches
Safari > Preference > Advanced
Checkmark the box for "Show Develop menu in menu bar".
Develop menu will appear in the Safari menu bar.
Click Develop and select "Empty Caches" from the dropdown.
Quit Safari.

I have found that when I shut down my computer, the apple.com/uk homepages comes back! Eveen adter following your steps, and setting the homepage again. Please, could you help me?

Resume
With Resume enabled, Safari will open up with the same set of websites you had when you left Safari.
To disable Resume, in Finder select Apple () menu > System Preferences… > General and
check the box beside "Close windows when quitting an application".
Tip: Press the Shift key when you open Safari to skip Resume.
That box is already ticked, Sorry
As well, after I have shut down, and turned my mac back on, in the safari prefrences panel, the default homepage reverts back to apple.com/uk

Empty caches.
Option click the "Go" menu in the Finder menu bar.
Select "Library" and then "Caches".
Right click "com.apple.Safari" and select "Move to Trash"
Relaunch Safari.
Reset Safari.
Click Safari in the menu bar.
From the drop down select "Reset Safari".
Uncheck all boxes.
Check the box beside " Remove all website data".
Click "Reset".
Temporarily turn off Extensions.
Safari > Preferences > EXtensions

Look for this file.
com.apple.safari.plist
Right click it and select " Move To Trash" from the contextual menu.
Restart the computer. Launch Safari.
