what does itunes helper do?

iTunes helper appears in my start-up applications. What does it do and shouls I leave it in with other log-in items? I'm just trying to start the computer more quickly without having several programs turning on and having to wait for all of them to load.

iMac, OS X Mountain Lion (10.8.2), May have to do with installation

It monitors for the connection of an iPod or iPhone and automatically launches iTunes when this happens. You can disable it - the only effect will be that iTunes won't open automatically when you connect a device.

However it uses very little CPU and is a small program so I doubt it will make any significant difference. If you really want to disable it select it and hit the '-' button.
