It spends on what iOS you are updating from. If you are updating from iOS 5 to 6.1,3 and you do it via iTunes on your computer, it could take quite some time. If you don't have a very fast Internet connection it will take even longer. If you are looking for an actual amount of time, it's impossible to say, bit it could take a few hours and it could take 90 minutes. When you update via iTunes you are downloading the entire iOS all over again.

When you update over WiGi, you are downloading an incremental update and it will not take as long. But once again, if you don't have a fat connection, it will take some time.

IIRC, I updated from iOS 5.1.1 to iOS 6 over WiFi in about an hour. When I updated from iOS 6 to 6.1 and then to 6.1.2 or whatever it was, it took about 15 minutes each time over WiFi.
