I have sent some emails using my iPad and then went to find them and can't. After looking at the advanced settings for my mail account I see that there are 2 groupings of folders... "On My iPad" and "On The Server". I realize that I should change the setting to the server however it is currently set to the sent folder on my iPad. Where is that local folder and how do I access those messages?

They should be accessible within the Mail app. If you tap your account id at the top left of the list of emails in your Inbox then you should be able to navigate up a level, and you should then be able to select the Sent folder (you may have both local and server Sent folders, so you may have a choice).
So here is what I did...
While viewing an email I clicked on the account name in the very top left of the screen.
I was presented with a list of "Inboxes" followed by a list of "Accounts". In the "Accounts" list I clicked on the appropriate account. I was presented with a list of folders residing on the server but no local iPad folders.
All the folders that are on that account should be listed. If I change to store drafts and sent on my iPad then they show under the Drafts and Sent folders that are listed diretly below the Inbox (I created a draft email to test it) e.g.
If I change the account's settings so that they are stored on the servers then those two folders display emails from the server and the emails in the 'on my iPad' folders aren't accessible
