Just got a new laptop and have downloaded itunes ,if i sync my iphone will it erase everything of my phone and start all over ? or will everything from my phone go on to this new itunes ??

No. The Sync is One Way... FROM computer TO iPhone.

To have everything as it was on the Old computer on your New computer...
From your OLD computer...
Copy your ENTIRE iTunes FOLDER to an External Drive... and then from the External Drive to your New Computer..
