It is a way to connect to your e-mail server securely. It encrypts the contents of your transmissions so that no one else can see it. Without SSL in e-mail, any time you check your e-mail in a coffeeshop, hotel, or any other unsecured WiFi location, your are broadcasting (literally) your e-mail account and password for all the world to see in plain text. In today's world, you should always use SSL for e-mail.
