Two migrations at once: G5 to Intel and 2g to 5g

I currently own a 2nd generation iPod Touch, which I've got synced to the iTunes library on my old
G5. My library includes a lot of music ripped from my old cassettes and CD's, not just iTunes purchases.


I'd like to buy a new (5th generation) iPod, but it won't sync to my G5 because the computer can't run iTunes 11.


AFAIK, I can't use iCloud sync because neither the old iPod nor my G5 support it.


I do have an Intel-based Mac mini running Snow Leopard (and iTunes 11) at my disposal, and both old and new Macs are networked.


What steps do I need to go through to make the move?
