Is it a good idea to update every time, especially with Big Brother vacuuming up all our details? Is there any advantage to staying behind the curve?

Yes
Apple often releases small bugfix updates to help make your iPhone better to use, and often big, feature-filled updates (Like iOS 7, which is coming this fall)
