Without connecting the iPad to your Mac, launch iTunes. Go to iTunes>Preferences>Devices. Make sure that the box at the bottom of that windo that says - Prevent iPods, iPhones and iPads from Automatically Syncing is unchecked. Once that is unchecked, you should be able to turn on the Open iTunes when this iPad is Connected feature in the Summary tab. Click OK in that window and quit iTunes.
Now connect the iPad to iTunes and launch iTunes. If you don't see the iPad in the sidebar you may have to enable the sidebar first. From the menu at the top of the screen, go to View>Show Sidebar. Now you should be able to see your iPad under the devices heading.
Click on the iPad name and the Summary Tab should open. Go down toward the bottom and Check - Open iTunes when this iPad is connected. Click on Apply in the lower right corner of iTunes.
Now click on the Apps Tab at the top and the list of apps should appear and you can install or remove as you see fit. After you make all of your selections, click on Apply again. You should also see your apps on the iPad screens in this window, so if you want to rearrange apps and create folders in those windows you can do that as well.
If you were adding documents using file sharing - Swipe down to the File sharing window in the Apps Tab and click on the app that you want to add documents to and follow the procedure that normally do when you use file sharing.
