When I add someone to to contacts and add their phone number i often put their cell phone as mobile until I know if they have an iPhone. Once I know they have an iPhone I would like to change it in contacts, but I cannot find it in the options.
How can I update mobile phones to iPhone in Contacts?

Open up the contact, tap the Edit button in the upper right. Tap the label ("mobile") and select from the list of options. Note: if you are syncing your contacts to an Exchange server, you may have fewer options for labels. iPhone is not, in my experience, one of the options in that case.
Whereas my contacts from Gmail do not offer those options becuse I'm still syncing using Exchange. If I add a contact to the iPhone, I get "iPhone" as a default (not Custom) option.
I look forward to the day when someone, somewhere, finally makes it possible to sync contacts from multiple sources in such a way that I do not end up screaming at something. 🙂
I think only accounts from certain places have the Custom Label Option. Contacts from iCloud don't offer that oiption, but my contacts from Gmail do.
Synching to Gmail - exchange server.

Apple has no control over the labels available in Google's Exchange server.
Yeah, it gets extremely irritating. 😉
