Because "Off" means "Off". If it isn't on how is it going to know when an alarm is due?
Simple - with all Apple iOS devices, off is just that, OFF. Everything powered down.
Smart phones that perform they way you are thinking do not actually fully power down when you turn them "off" - they leave some functions still running so that the clock can awaken the device at the alarm time.

Yes there is - DON'T TURN IT OFF. It goes into sleep mode normally, and the alarm will sound. If you turn it OFF, it is OFF.
Sure. You can put the phone is sleep mode by tapping the power button on the top right of the phone. You can save more power by first putting the phone in Airplane mode.
Or, you could just plug it in at night.

Yes... But putting the Device in Sleep Mode is not the same as Off .
If sleep mode isnt the same as off wouldn't alarms work

Alarms will work in Sleep mode.
I don't want to have it on charge all night cause it will just ruin the battery

No it won't...
No, it won't ruin the battery. The charger is in the phone, not the external power source. The internal charger will stop charging once the battery reaches full charge. I've left all of my iPhones plugged in overnight, every night for 6 years. I've never had a battery failure.
I and many others leave theirs plugged in all night - as already mentioned it is perfectly safe and will not harm your device or reduce the life span of its battery.
