I have the lastest OS on my iPhone5 and now I can't get headset or car to pair with it. I have tried everything that I can find.

Assuming you've checked all applicable settings like you said, I would suggest borrowing a friend's bluetooth device and trying to pair it with your iPhone. Also, try pairing the headset to a friends phone. That will let you know if there is a hardware issue with either component.
It will not let me delete it either. I was going to do that and then add it back.
Check this http://support.apple.com/kb/HT1664 support document. The headset has to be in pairing mode, then turn on Bluetooth on the phone, and follow the directions from the manufacturer of the headset. This should help. I'll update it with one for car stereos.

IF you want to delete the connection, you need to tap on the blue arrow to the right, not the name of the device itself.
My wife paired with my car and with the headset I am using. I will have to try the other part later with another bluetooth headset.
No blue arrow comes up.
Had to get phone replaced.
