Does using an AppleTV with home shareing count against your 5 PC's?

I have 2 AppleTV's, One in the bedroom and one in the Living Room. When set them up for homesharing do they each count against the 5 PC limit? Any chance of getting the 5 PC limit increased?

No. Only authorized computers count towards that limit of 5. Actually if you install multiple operating systems on the same box each one is treated separately. iOS devices can (but don't have to) count against a limit of 10 computers and/or iOS devices that can be simultaneously authorized for automatic downloads of your purchases.
