Adobe told me to install the ICA driver for my epson 630 all-in-one so I did. Now preview doesn't scan anymore, and Acrobat still doesn't work. How do I get preview to work?

Acrobat requires a TWAIN driver. It doesn't work with an ICA driver, which is just for Image Capture / Preview.
When you attempt to scan with Preview, what happens? Have you tried using Image Capture?

That's really odd. Adobe Support told me to install the ICA driver. I managed to get Preview working. But Acrobat XI Pro still doesn't see the scanner.
Epson has a TWAIN Scanner Driver and Scan Utility v3.77 on their site. If you install this driver and utility I expect that you will then be able to scan with Acrobat Pro.
