How can I change the language parameter of the in-built dictionary?

How can I choose what dictionary to use in iBook/ on websites etc? I am reading a paid-for italian novel with correct meta-data however it keeps giving me Spanish definitions. My keyboard is already switched to Italian. I use an iPad mini with iOS 6.01.03. Thanks in advance

There isn't any Italian reference dictionary, only English, German, French, Spanish, Japanese, and Chinese.
