I would like the phone to always have good contrast between the font and the background. Right now it's set so major items are black, but lesser items are gray (just like this website!!). This is difficult to read. How can I set it so they are all black on white? There are lots of older users whose eyes are not as able to distinguish small print with poor contrast as younger folks can.

I've always seen email have black font on a white background unless someone sends something in HTML or something colored. I believe that would depend on the sender, not the receiver. With the exception maybe of the date of the mail.
I'm not aware of any other settings that you could change for that.
No, the headings are black, but the subjects are lighter and smaller and the message is lighter and still smaller. Thanks, though.
You can zoom the text, that might help. Go into Settings, General, Accessibility, Large Text. You can increase the size of text for Mial, Contacts, Calendars, Messages and Notes.
