Take a look at this kb article. It might have the a solution for you in it. Make sure that you go all the way down to the bottom of the article to see some of the iPad/iPhone/iPod Touch specific information. You may have to turn off and sign out of FaceTime and Messages on all devices and the start over again on one of the phones in order to add the number to the iPad.
It's usually best to use an email address (free gmail.com).
