How may I find out about, control, and edit, the credit card information associated with my appleid? For example, say I want to use a different credit card account. How would I go about changing it?

Open the App Store app, go to the Featured pane, swipe to the bottom, tap your Apple ID and choose View Account. Supply your password. You can change the bank card in Payment Information.
