Why the spilling in catalan has malfunction and it not identify the catalan as the language that I'm writing.

Sorry, I misread your post. The keyboard is irrelevant for OS X. Also your photo does not show the keyboard, but the system language. To see the keyboard, you have to click on the Fonts d'entrada tab.
OS X has never had a spell checker for Catalan. You have to add one yourself.

That link is 6 years old and the cocoaspell add on is outdated now. It is better to use the link I gave you.

Go to: https://www.softcatala.org/wiki/Projectes/Catalanitzador_de_Softcatal%C3%A0
There you'll find: https://www.softcatala.org/wiki/Rebost:Catalanitzador_de_Softcatal%C3%A0
With that application you can automatically install de CatalĂ corrector in the system, I believe you'll find it then at your Biblioteca/Spelling/ca.aff
