I reset my home screen to show all apps in alphabetical order. I when to the end and saw some apps were missing. I searched them in spotlight search and they showed up. I have 10 home screens and some 135 apps. Is this happening because I have too many apps? How do I fix this?

Try resetting you ipod. Press and hold the home and power button at the same time until the screen turns off. Then turn it back on to see if it is there.
Arrange the apps into appropriate folders so you can more easily find them. See:

It may be easier to arrange them in your iTunes library when the iPod is connected to the computer.
