Q: how do I update an older i pod touch ? 1st or 2nd gen. ? everyway I try it doesn't even bring up the sync screen

I am unable to update an older Ipod touch. 1st or 2nd generation. I have not updated it in quite some time & have skipped a few updates in the past and didn't experience this situation.

iPhone 4S, iOS 5.1

If you mean that the iPods do not appear in iTunes then:
iOS: Device not recognized in iTunes for Windows
or
iOS: Device not recognized in iTunes for Mac OS X
A 1G can only go to iOS 3.1.3 that you get here:
