You can do this. Open Settings > General > Usage > Music, press Edit button and remove your music

To delete all music go to Settings>General>Usage>Storage>Music>Tap edit in upper right and then tap the minus sign by All Music
With iOS 5 and later you can swipe each song and date the Delete button that appears.
You can also connect to your computer and unsync them
