playlist and ratings data - can i move to another computer/library
Is there a way I can export my metadata such as playlists and ratings data and reimport this info into a new copy of the iTunes library? I've already imported all the music.

Not sure about ratings info. Easiest way to get everything is to simply copy the entire iTunes folder to the new Mac, though.
Yeah, I would but at the same time I needed to do some pretty drastic cleanup, so I was recovering only certain folder trees from backup into the new library. I suspect that that metadata is bound to the entire library as a whole and cannot be decoupled, but thought I'd ask anyway.

All the metadata you want is kept in the iTunes Library.itl file. Along with the folders in the iTunes folder, move at least that file to the new computer and the metadata will be there.
Rather than doing it piecemeal, just copy the entire /Music/iTunes folder from old computer to /Music/ on new computer.
That is all you need to do to copy the entire library to new computer
