I want to know if it is legal to repair apple products and not have the risk of being sued.

it is not illegal to repair products but if you are not an authorised repairer then the warranty is void
Additionally, only Apple Authorized Service Providers have access to genuine new parts, tools and diagnostic software needed to perform warranty repairs and get paid back by Apple for the job.
If you go and wreck an expensive Mac/iPhone/iPad/etc., yes the owner can sue your arse and Apple may even pitch in to help.
