Where can I get info about managing my children's devices under my account? My daughter has an iPad mini and my son has an iPod. They are currently sincing together...when my daughter gets a message, it is also going to my son's iPod. How can I get them to be separate, but managed under my iTunes account?

You have already seen that they should have separate accounts from each other.
I don't know how to put their accounts "under yours". Maybe support can help.
Note you can also set restrictions if that would help: Settings > General > Restrictions.
