I know how to transfer purchased items from my iPod touch to my Macbook Pro but how do I transfer other music from CD's or albums that I got free online from my iPod touch to my Macbook Pro. (Basically songs that I haven't bought in iTunes)

You'll need to use third party software to do this. There are several good shareware programs including Senuti and iRip. I'm no longer aware of any reliable free program.
I dont know if it is same for ipod touch but i followed this You Tube video to get music from my ipod classic to my new mac. No 3rd party software needed.

The only thing that i lost was my playlists but this wasnt a biggy too me. I still have them on my iphone and ipod. Provides incentive to make some nice new ones. :-)
