As a new user of Ipad Mini I find that my inbox is shown regardless of whether I have logged in to my Yahoo mail. How do I set it to only show after logging in to yahoo and how do I log out as I would do if using yahoo mail in a browser?

That is how the Mail app works on iPads, similar to how you use email programs on a computer - your email account's password was stored in the app when you added the account, so you are effectively always logged in to it. If you want to have to log on and off each time then there might be email apps in the app store that have that option, or you can use Safari - you can go to your account's login page in Safari and then add a shortcut on your iPad's homescreen via the 'share' icon (the box with the arrow coming out of it) at the top of Safari.

You can delete the account from the Mail app yes, that you won't affect other things on your iPad - you can delete it via Settings > Mail, Contacts, Calendars, select the account on the right-hand side of the screen and there should be a 'Delete' button (or you can just turn mail 'off' on that screen, that will 'hide' it from the Mail app but will leave your account settings on the iPad in case you ever want to turn it back on without typing them back in).
