I want to use one airport extreme wireless ap and then extend it in two directions by using two airport extremes....can this work? Will signals drop in either direction? Any conflicts by using two expresses?

Yes, this should work just fine. The "extend" feature of the 802.11n or 802.11ac AirPorts works in sort of a wheel fashion, with the base station to be extended at the hub of that wheel and the extending base stations on any one of the spokes.
To get the best signal / bandwidth performance, placement of the extending base stations is critical. Please check out the following AirPort User Tip for optimal placement details.
