and my Mac will be able to download 11.05 itunes update correct? Or will I have to buy the upgrades all the way to OS X Mountain Lion? All I want to do is confirm that if i get this upgrade my new ipad will be able to connect to my itunes!

iTunes 11.0.5 needs Mac OS X 10.6.8 or later, so if you buy Mac OS X Snow Leopard, you will be able to install iTunes 11.0.5.
Before upgrading, make a backup of your files with Time Machine > http://support.apple.com/kb/HT1427 Insert the disc and upgrade to Mac OS X Snow Leopard. After upgrading, open > Software Update, and install all updates. You may have to use Software Update again to install the most recent iTunes version
