Recoving info from previous restore

How do I restore my ipa tdo a back up that I did in January? I erased some info from it and so I do not want to restore it to the more recent time that I've restored it because the info was only on the restore from January.

If you backup with iTunes, you can't restore from an older backup because you overwrite the old backup the next time that you backup - and the old one is replaced with the new backup.

I also would assume that you have backed up many, many times since January, so that backup is long gone. If you sync with iTunes, your device is backed up automatically as well and once again that would have overwritten that backup from Janauary long ago.
