You cannot uninstall OS X. You cannot downgrade it. You can erase the drive and install an earlier version of OS X. Perhaps you could relate what problems you are having, and why you want to uninstall Mountain Lion.
I have Mountain Lion and a software program I use to make photo albums gives me a error message of JAVA SPACE, I was advised it may not be compatible with mountain lion and to try to go back to Lion to hopeful resolve issue
That is a Java error rather than an OS X error. Possibly the fault is in the program, not in OS X. Did this program work in Lion before you upgraded? Have you checked with the developers to find out if there is a solution or workaround or upgrade that would solve the problem?
The only ways you can install Lion are to partition the drive and install Lion on the second partition, then dual boot between Mountain Lion and Lion; or, erase the internal drive and install Lion on it. In either case you will need to get your hands on the Lion installer application.

If it came installed with Lion, then Internet Recovery will install Lion, once you erase the disk.
Don't know that's the case, only that the OP had been using Lion. And, the computer must support Internet Recovery.
Computers that can be upgraded to use OS X Internet Recovery in which case the OP could use OS X (Lion/Mountain Lion)- About OS X Recovery.
