Restore backup to a new iPad

I understand resorting to the iPad from a backup (on the computer, not iCloud).

I am currently using an original iPad, but will be getting a new one when released this year. I want all information, data, and apps to be moved to the new iPad.

My real question is if the backup is of a iOS 5.1.1 but the new iPad wil be iOS 7, will the restore from the computer to the new iPad also restore the old iOS 5.11 to the new iPad, overwriting all the iOS 7 system and apps?
