If you have iWork installed from a retail box you need to use that DVD to install on the new Mac. If your purchase was a "single-user" license (actually single computer), you will need to delete the iWork folder from the Applications folder on the older Mac to stay within the software license. Unlike other software companies, Apple doesn't track installations.

I failed to mention that I bought Pages in the App Store online. Would the same apply? Deleting the application from one macbook would allow me to download the app to the new macbook?

The Mac App Store lets you install Pages on any (multiple) Macs using the same Apple I.D.
