I am trying to create a soft return in keynote.
How do I do that?

Double tapping where the soft return is to go will bring up a pop-up box. Select 'insert', then 'line break'.

Just for the record.
In the current (Feb 2014) Pages for the iPad, there is a '+' key at the top right of the keyboard. Tappng this brings up a list of options including soft return.
